Chemmeen Achar (Prawns pickle)
Ingredients
- Prawns (medium sized) - 1 kg
- Garlic - ¾ th of prawn weight
- Ginger - ¼ th of prawn weight
- Green chillies - 4 nos
- Gingelly oil - As required
- Salt - to taste
- Chilly powder - As required
- Vinegar - As required
Preparation Method
- Marinate the prawns with chilly powder and salt for 30 mins.
- Heat oil in a pan .
- Fry garlic lightly in it and keep aside.
- Fry ginger in the same oil and keep it aside too.
- Fry prawns and keep it aside. Deep fry it, if you want to keep it for a long time.
- Fry some green chillies in the same oil.
- Mix together chilly powder and vinegar to make a paste and fry in the remaining oil.
- Add all the above fried ingredients into this and mix well.
- Allow it to cool.
If more gravy is needed, add cooled boiled water.
Store them in bottles, before using.
