Coconut Milk Cake
Ingredients
- Coconut milk- 1/2 cup
- Grated coconut- 1/2 cup
- Maida -1/2 cup
- Butter (unsalted)- 1/2 cup
- Sugar powdered - 3/4 cup
- Egg-2 nos
- Lemon juice-1 teaspoon
- Vanilla essence - 1/2 teaspoon
- Baking powder- 3/4 teaspoon
- Salt- a pinch
Preparation Method
- Sift maida, baking powder and salt together.
- Take butter and powdered sugar together in a bowl and mix the egg yolk well.
- Add maida, grated coconut and coconut milk and mix slowly with a spoon.
- To this add lemon juice.
- Beat the egg white till stiff adding vanilla essence.
- Mix the well- beaten egg white with the cake mix and bake in a pre-heated oven(150'C) for 20-25 minutes.
