Ingredients
- Black-eyed beans - ½ cup
- Water - 2½ cups
- Ash gourd (diced) - 2 cups
- Green chillies (half slit ) - 6
- Salt - to taste
- Thick coconut milk - 1 cup
- Curry leaves -1 sprig
- Coconut oil -1 dessertspoon
Preparation Method
- Cook the black-eyes beans in 1½ cups water in a pressure cooker and keep aside.
- Cook the ash gourd with green chillies, salt and 1 cup water.
- Add the cooked beans and allow to simmer for a while.
- Add coconut milk and curry leaves. Remove from heat.
